Invite a yellow curry into your home !

So why not invite a yellow curry into your home I say and besides it taste pretty darn delicious . I’m sure you could even get this on the table faster than heading to your local take away shop. My version has no extra add oils , or sugar and of course plant based.
Recipe Ingredients ….
Firstly prepare your veg ( no veg then use a bag of frozen) - I used a colander full of veg. Plus one large red onion . *** I always add my leafy greens in latter so they keep their colour.
2 tbsp Yellow Curry Paste ( add more or less to suit your taste buds)
1 tsp Celtic Sea Salt
2 tbsp Date Syrup
2 tbsp Peanut Butter
1 tsp of Turmeric ( why not sneak in a bit of extra gold power)
A good grind of black pepper ( this helps the turmeric release it’s good stuff)
1 C water
( I always put my pastes into water first so they mix through my curry evenly)
1 C of plant based . Coconut milk is my first choice but any will be fine.
Let’s make it ….
In a little water stir fry your onion until soft . Add your veg and your curry mix. I like to put a lid over my pan so they steam up nice and quick . Takes only 3-5 mins . Add in your milk . Heat through and you are done . Of course you could add chickpeas , or tofu or just as it is! We had ours with brown basmati rice to soak up all that golden goodness.
