Stuffed Capsicums - Delish !
A friend who is on holiday in South Africa shared a photo of his stuffed capsicums and somehow I knew I had to try them! He loosely sent the recipe so I figured out how to make them. I’m so glad I gave them a go as they were delicious . Even when I was just cooking through the capsicums with out the filling the kitchen smelled great!
Stuffed Capsicum
Capsicums x4 - 6 depending on size / any colour
Cooked Rice 2 Cups
X1 C Black beans ( drained and chopped)
X1 Onion
X3 Cloves Garlic
X4 Tomato’s
Olives
Jalapeño
X1 Massels Stock cube dissolved in 1/3 C water
1 tsp Salt
2 tbsp Siraccha Hot Sauce
Cut capsicums length wise scoop out the seeds. Place on a baking tray and bake for 30mins at 180deg
In a large frypan or wok fry off your onion and garlic . I take my time to get some colour on the onions . Add in all of the other ingredients and give it a good mix . Do a taste test and adjust . Stuff into your capsicums and return to oven for 20mins at 180 deg until all is piping hot.
I topped mine with my not cheese sauce ( recipe posted previously) and coriander.
