How about a Butter Tofu that is super tasty, packed full of life giving plants and has no nasty fats so it’s not going to weigh you down! This is so incredibly fast to make and has loads of flavour. Lots of greens on the side and your tummy will love you!
Butter Tofu
Tofu press to remove water, tear apart and dust with cornflour . Either pan fry or cook in the air fryer. I use air fryer as I don’t use oil .
Spice Mix
2 tsp Garam Marsala
3 tsp Grd Coriander
3 tsp Grd Cumin
1 tsp Turmeric
2 tsp Coconut Sugar or Date Syrup
1 tsp Celtic Sea Salt
Good Grind of Pepper
Just mix the spices together in a small cup.
2 Med Onions sliced
1 Can Chopped Tomatoes
3 Cloves Garlic Crushed
Thumb size of ginger grated
1/2 - 1 Can Coconut Milk
Sauté your onions till soft and add garlic and ginger . Next add your spices. Next add your tomatoes and coconut milk. Simmer for 8 - 10 mins till flavours have combined and it’s hot . Add in your tofu .
