Orange, Chocolate and Spice Buns

2 C Warm Water

3 Tbsp Vegan Butter or oil

1 Tsp Sea Salt 

2 Tbsps Coconut Sugar or Honey 

2 1/2 Tsp Instant Yeast 

2 Tsp Baking Powder

1 Tsp each mixed spice , cinnamon and cardamon 

4 C Spelt Flour 

1 Cup of Raisins 

1 Orange 

Dark Chocolate about 1 C 

Firstly :

Put your raisins and the juice of an orange and zest into a small pot and simmer until the raisin are plump. 

In a large bowl :

Add warm water, coconut sugar , butter and add yeast.  Bloom.  (Yeast starts to grow) 

Next put all of your flour and spices and baking powder into a bowl and give it a whisk. 

Add this into your liquids.  I use a fork to combine.  When you have a dough add in your raisins and chocolate pieces.  

Give it a very light knead and shape in to 12 buns.  I cook in a small lined roasting dish so the buns go up as they have not much room to go wide. 

Crosses - I simply take about half a cup of flour and add water to make a soft dough.  I roll out into thin little “worms”.  I drape a cross the top then roll another “worm” and place the other way.  I brush the top of buns with a little plant based milk and bake at 200deg for 20-25 mins. 

When I take them out I brush with a little pure maple syrup or honey to make them shiny and sticky!
