Cinnamon Walnut Buns 

Dough 

2- 3 C Spelt Wholemeal Flour 

1 Tsp Baking Powder

2 Tbsp Coconut Sugar 

1 Tbsp Oil (optional) 

1 Tsp Instant Yeast 

3/4 Tsp Salt (optional) 

1 C Warm Water 

Filling 

10-12 Dates (cooked in 1/3 C water) 

2 Tsp Cinnamon ( I used Ceylon but if you are using the other maybe just 1 Tsp )

1/2 C Walnuts + 1/4 C extra for Crunch 

1 Tsp Vanilla Essence 

For the dough.  Bloom your yeast in the water with coconut sugar , oil and salt.  When it bubbles add your flour and baking powder.  Give it a little knead to bring together.  Then roll out into a rectangle on a floured surface. 

Blend the filling ingredients.  Hold back the extra walnuts.  

Spread the filling over the dough.  Add extra walnuts and roll lengthwise nice and tight.  I cut into 8 buns . 

Cook @180 deg for 15-20 mins
