Luisa Plum Fruit Galette

Pastry 

1 C Oat Flour 

1 C Almond Flour 

1/2 C Whole Wheat Spelt 

1 Tbsp Maple Syrup 

1 Tbsp Coconut Oil 

1/4 Tsp Salt 

3 Tbsp Ground Flaxseed in 5 Tbsp Warm Water 

Topping 

Fruit 2-3 Cups 

1/3  C Jam 

1 Tbsp Maple Syrup 

Now put all of your ingredients into your food processor and process until dough forms a ball.  If it’s struggling add a little cold water.  

Roll out into a large circle.  Large pizza size.  ( I roll out on my silicon slip mat with a little extra flour.  I then put a piece of baking paper over the top and flip onto my tray). Now brush the inside with a little jam.  I used apricot .  Then top with your fruit.  Then just fold in a couple of inches over the top of the fruit.   I added another wee drizzle of maple syrup as I know plums are sweet but tart.   You please yourself.  

Cook in your oven @175deg for 30mins or until galette is lightly brown and crispy and the fruit is soft and cooked.
