1 Packet of Taco Seasoning ( or make your own - see note)
2 C Water
1 Tin of chop Tomatoes or x5 Ripe Tomatos
1 C Rice
1 Tin Black Beans (drain)
1 C Corn Kernels Fresh or Frozen
1 Big Red Capsicum (Chop)
Into a casserole dish add your liquids. Mix in your seasoning. Then add the rest of your ingredients. Cook uncovered for 30-40mins @180deg
If your rice is not cooked enough then cook a little longer and if itโs looking too dry just add a little more water.
When cooked top how you like. I used hummus but guacamole would also be good. Some corn chips (I use a tortilla cut into triangles toasted in the oven)are all great toppers.
This would be yummy on corn tostadas with shredded lettuce and pickled pink onions. And a dollop of sour cream or yoghurt. You get the picture - have fun. Eat with those you love and enjoy!

1 Tsp Garlic Powder
1Tsp Onion Powder
1 Tsp Oregano
2 Tsp Cumin
2 Tsp Paprika
1 Tsp Salt
1/4 Tsp Chilli Powder
Just mix together
