Quinoa ,Date and Roasted Pumpkin Salad with a Creamy Balsamic Dressing

This salad is so delicious I could eat it every day!  The flavours just seem to melt into each other and then the dressing - just yum.  It’s oil free so nice and light for those wanting to eat a salad that loves them right back! 

Creamy Balsamic Dressing 

1/3 C Tbsp Sunflower Seeds

3 Tbsp Balsamic Vinegar 

6 Dates

1 Tbsp Soy Sauce 

1/3 C Water 

Blend Together until creamy. 

Salad 

2 C Roasted Pumpkin

2 C Cooked Quinoa 

3 Tbsp Pumpkin Seeds

2 C Kale ( finely chopped) 

1/2 Dates ( chopped) 

1 Can Black Beans (drained) 

Mix together and enjoy.
