Hello my little chickpeas
Humans are the only species that requires scientific evidence that fruit and vegetables are good for them!  

I find that statement a little funny and slightly scary both at the same time. If you want evidence well there is a ton out there. Starting with the Seventh Day Adventist Study. A great piece of research that follows a community of SDA people who eat a plant based life style. This is a longitude study which means it wasn’t just a small cohort group over a short time. It also was funded with independent funding.  So unlikely to be biased. 

These Loma Linda SDA people are featured as people that live in a Blue Zone. That means they live longer than most others. You can read more about this Loma Linda, California - Blue Zones here. I don’t know about you but I would like those longer healthful years and to do my best not to die of some painful lifestyle disease. My plan is to kiss my loved ones good night and die in my sleep.  

Wouldn’t it be great to see our cities become blue zones instead of adopting the SAD (Standard Aotearoa Diet ) and sedentary lifestyles we see? Our country is ranked no24 in world life expectancy but sadly we are just living longer sick. What does that mean? It means you are missing out on life and often in pain.  

But my lovelies this is what I know to be true. We can make our homes Blue Zones! 
Yes we decide what’s in our pantries and fridges.How much movement we can get into our days. We can change the trajectory of those lifestyle diseases in our families.  How cool is that? 

So to get you started in your blue zone I’m giving you a meal packed full of beans.  

It’s a bowl of love - maybe you could call it a gift. Because if you start eating like this you will be giving yourself and your families the best gift ever. Health. 💚

Bowl of Beans

1 Onion Chopped

2 Cloves Garlic Chopped

1 Carrot Diced

1 Stick Celery Diced

1 Red Pepper Diced

1 Can of Cannellini Beans

1 Can of Black Beans 

1 Cup of small Pasta 

1 Tsp Italian Herbs

1 Tsp Smoky Paprika 

Black Pepper

2 Tsp Sea Salt 

Enough water to cover 

Tip into a pot and simmer away until pasta is cooked. Add more liquids if needed. 

Just before serving add a couple of good handfuls of your fav leafy greens. To serve I like a dollop of hummus on top and a slice of sour dough to mop up the left overs.
