Oh wow it has got hot, even more so in the kitchen. Now is the time to change up what we eat and how we cook.
You probably know by now that your body is between 60 -70% water. You should be drinking minimum of 6 glasses of water a day. A few more if you are exercising or having drinks that dehydrate you - that’s drinks that contain caffeine. Have you tried a a herbal tea? I like mine over ice it’s so delicious and refreshing.
But did you know that our veg and fruit are great for hydrating your body too? Actually lots of plants are hydrating as they mostly have a high water content but veg like cucumbers, courgettes and salads leaves are exceptionally good. Watermelon is brilliant too but still a little costly for me at the moment! Strawberries are very high in water content as are most of the berry family.
So here’s a little cucumber salad that’s ready in a flash, it will be super hydrating and involves no cooking. Serve it as a side or as a starter. You will need to have some protein with it if you are going to call it a complete meal. I would likely whip up some chickpea tuna. (I will share that recipe too ). The great thing about chickpea tuna is it’s also a no cook recipe and great for lunches or loaded into a sarny with lots of crunchy cos lettuce and cucumber.
Below is a pic of my julienne slicer. The brand is OXO and it’s a little beauty, takes up very little space and nice an sharp. You can adjust the size and it’’s a great wee tool to make slicing a breeze.
Now before I go please remember our kids, our elderly and our pets. They all struggle with regulating their body temperatures. So lots of water and shade. Please don’t leave any of them in a car. Not even while you duck into the supermarket that car heats up quick. And lastly please do not walk your woofs while the sun is still out. The concrete is burning hot and burns their pads on their feet. Sadly I still see people walking their dogs in the middle of the day. It’s the same with our babies in strollers when we put that cloth over the front to stop the sun. That pram heats up real quick as you have now blocked off any air flow.

*Chick Pea Tuna *
2 Tins of Chickpeas
Juice of a Lemon
2 Celery Stalks
1/2 Red Onion
1/3 C Vegan Mayo or Yoghurt
Nori
Black Pepper
Gherkins
Salt to taste
Drain and mash Chickpeas. Add the rest of the ingredients.
*Asian Cucumber Salad *
1 Telegraph Cucumber
3 Spring Onions
1 Tbsp Soy Sauce
1 Tbsp Maple Syrup
1 Tbsp Sesame Oil ( Optional)
1/3 C Rice Wine Vinegar
Chilli Flakes
Slice your cucumber nice and thin. Mix dressing ingredients together and add to cucumber. Needs 10mins to infuse. Just before serving sprinkle on sesame seeds.
