This week I want to chat about inflammation. If we have inflammation in our body it is where most modern dis-ease begins. If you want less inflammation then you need to move your body away from an inflammatory diet. That’s a diet high in ultra processed foods, take aways , fried foods, sugar and processed meats. Then introduce an anti inflammatory diet which is high in vegetables, fruit legumes and lentils.
Now remember what you eat today you crave tomorrow. It takes time to learn to eat foods that are not highly processed. Our taste buds need to change. They have been conditioned to make us crave the foods that light up our brains. The very same parts of our brains that cocaine does. So it’s an addiction and a challenge to over come. I promise you that you will. I am the living example of this!
Finally after years and many many diets I now eat a whole food plant based diet (WFPB) and my body is healing. I am not special so I know you can do it too! It’s about those healthful years. As Dr Joel Fuhrman says “ if you don’t like vegetables then you better live close to a hospital”!

Today’s recipe is a beautiful salad with a Strawberry dressing.
Strawberries are packed with Vitamin C (more than any other berry- though technically not a berry). They are high in fibre and chock full of antioxidants and Quercetin just perfect to fight inflammation.
🍓🍓Strawberry Balsamic Dressing 🍓🍓
Into the blender
1 C Strawberries
1 Tbsp Maple Syrup
Black Pepper
1 Tsp Sea Salt
2 Tbsp Balsamic Vinegar
1/3 C Sunflower Seeds
Water 1/3 C but add slowly as needed.
Just blend up until nice, smoothy and creamy and smother your salad guilt free. I added extra strawberries to my salad. I also added in chickpeas and some tofu for a little extra protein.
