Roasted Eggplant

I just love the creaminess of egg plant with a slow roast in the oven. Somehow it feels buttery and velvety that no other veg can deliver . This was absolutely delicious and pretty simple. You just cut your eggplant in half and mix up a marinade and push it into those cuts so it goes all the way through. This would also be yum on the BBQ and I think a few carnivores may just love it too!

Marinade

2 Tsp Miso

2 Tsp Peanut Butter

splash of Tamari or Soy Sauce

2 Tbsp Maple Syrup

A little water to loosen .

Baste the egg plant and pop into the oven at 200deg for 30-40 mins until it’s all soft and caramelised.
