Spinach Tofu Koftas

Spinach Tofu Koftas with a creamy Curry Sauce …

I know I say it all the time but these are delicious. The sauce is creamy full of delicious spices but mild enough for the kids . Though for me I would like a chilli in my sauce for heat if that’s you just add some chilli to your liking .

Koftas

1 bag of Spinach chop in your food processor then add …

1 Block of Firm Tofu (drained)

2 tbsp Health Yeast

1 tsp Celtic Sea Salt

2 tsp each garlic & onion powders

2 tbsp Cornflour

Roll into your koftas and cook at 200deg for 20 mins or until nice and brown . Turn half way through cooking time .

Sauce

1 Onion

1 thumb size of ginger

4 Cloves of Garlic

Sauté till the onion is soft then add

1 tsp each of Cumin , Coriander, Garam Marsala , Turmeric . Grind of black pepper. 1 Tsp Salt . Cook till fragrant then add

1 Tin Tomatoes

1/3 C Cashews

1/2 C Water

1 Tbsp Date Syrup

Simmer away for 5 mins then blend until it’s smooth . Pour back into the pot and add 1 C of Coconut Milk . Warm through then pour over your koftas and enjoy.
